Falling Film evaporators are best used on highly heat sensitive products. In a falling film evaporator the liquid product enters the evaporator at the head and is distributed into the heating tubes as a thin film. Through gravity the product flows downwards at boiling temperature through the evaporator and partically evaporates. The separation of the concentraed product from it vapor occurs in the lower part of the evaporator and the separator.
